MAKES TWENTY 3½-INCH COOKIES
1. Sift together the flour, baking soda, cinnamon, and salt in a medium bowl. Add the oats and chocolate chips and mix well to combine. Set aside.
2. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl using an electric mixer, mix the peanut butter, butter, and sugars on low speed until the ingredients are mostly incorporated. Increase the speed to medium and mix for 5 to 8 minutes more, stopping to scrape the bowl with a rubber spatula as needed. The butter mixture will be light, fluffy, and pale. Add the egg and vanilla; mix on low speed until fully incorporated, then scrape the bowl down again. Add the dry ingredients in 3 additions, mixing until just incorporated, about 1 minute. Be careful not to overmix: the cookies may become tough.
