2 For the filling, blend 80 ml milk with the vanilla blancmange powder and sugar until smooth. Heat the remainder of the milk in a saucepan while stirring. Use a balloon whisk to blend the pre-mixed blancmange powder with hot milk and bring to the boil again. Remove from the heat and leave to cool. Stir regularly to prevent a skin forming.

3 Whisk the cream in a bowl until it thickens. Use a wooden spoon to fold the cream into the cooled blancmange. Spread the blancmange cream over two sheets of puff pastry. Cover with the rest of the puff pastry sheets.
