Pork Tenderloin with Roasted Grapes

Your guests will be wowed by this dish…they’ll never guess it was so easy to prepare.

1 t. fennel seed, crushed

1/2 t. salt

1/2 t. pepper

1-lb. pork tenderloin

2 t. olive oil

1-1/2 c. seedless red grapes

1-1/2 c. seedless green grapes

1/2 c. chicken broth

In a bowl, stir together fennel seed, salt and pepper. Rub mixture over tenderloin; set aside. In an oven-proof skillet, cook tenderloin in oil 5 minutes, turning to brown all sides. Add grapes and broth to skillet; heat to boiling. Cover and bake at 475 degrees until fully cooked, about 15 to 18 minutes. Transfer pork to a platter and keep warm. Return skillet with grape mixture to stovetop; bring to a boil over high heat. Cook and stir until liquid has thickened, about one minute. Slice pork; serve with grapes and sauce from the skillet. Serves 4.
