Joint a chicken

1 To remove the wishbone, scrape the flesh away from it, using a sharp knife, then twist it with your fingers and discard.

2 With the chicken breast-side up on a board, use a sharp knife to cut through the thigh joint and separate the leg from the rest of the bird.

3 Now pull the leg back to dislocate the leg joint. You should hear a distinct popping sound when the ball separates from the socket.

4 If there is any skin or meat still attached to the bird’s body, use your knife to free it. Repeat steps 2 and 3 to remove the other leg.
