EGGNOG
1¼ ounces kosher gelatin
½ cup cold water
2 large egg whites
½ cup room-temperature water
2 cups pure cane sugar
½ cup simple syrup or light corn syrup
¼ teaspoon salt
1 teaspoon eggnog extract
1 teaspoon rum extract
¼ teaspoon nutmeg
1 cup confectioners’ sugar
½ cup tapioca flour
