Judy Steen recalled, “L’Oustalou was a really fun place to go—there was a long table down the middle section filled with plates of hors d’oeuvres, and everyone helped themselves until their entrée was served.” Suzanne Grelson Rom owned and operated L’Oustalou from 1973 to 1985. Suzanne remembered, “I’d go to Shopper’s Corner every morning to buy all my vegetables and look over their meat selection. Always trusted their meats. The fish people would come by to the restaurant in the morning too. There wasn’t a lot of storage space, so the wine was chosen and used up pretty quickly.”

Suzanne said:

I started in just the lunch trade, and then, business grew by word of mouth, so we opened for dinner. Setting up the recycling was fairly easy—we separated the bottles and cans. There were even people that came by to take away the extra produce, carrot tops, et cetera, for their backyard compost. Everyone became terribly aware of the amount of pollution in the ocean. We regularly hired Pete’s Outflow to come and professionally clean out the grease trap. There was always local artwork on the walls, like Hardy Hansen. The employees were often students at UCSC, and there was always lots of UCSC faculty who were regular customers, like Page and Eloise Smith and Paul and Charlene Lee.
