Tomme or Beaufort?

You don’t have to choose between these two classic Savoy cheeses, but you should know the difference. There are many types of Tomme, and they may be named based on their origin (Tomme des Bauges, Tomme des Aravis) or their flavour (Tomme au Génépi).

Carrying the label AOP, Beaufort cheese comes from cows who graze the Beaufort alpine pastures. At the Coopérative Laitière de Haute Tarentaise (www.fromagebeaufort.fr), cheese lovers can and should stock up. A special mention goes out to the rich aromas and layered flavour of the cooperative’s Beaufort d’été, or cheese made from milk collected in the summer.
