Remove the weight and clingfilm, then (if necessary) gently slide a knife around the terrine to loosen it. Place a plate over the tin and quickly invert both to turn out. The terrine will keep for 2–3 days if wrapped in clingfilm and stored in the fridge. Alternatively, freeze for up to 1 month and defrost when required.

To serve, cut the terrine into slices and offer it with bread or toast, butter, cornichons and salad.

Devilled chicken livers

Fresh chicken livers have so much flavour that they can hold their own with a devilled (spicy) sauce, a traditional English way of adding heat to a dish. The livers are best served on toast for a starter, or with salad for a light and good-value lunch or supper dish.
