Asparagus Salad

(Cooking Time: 20 Min and pre time 10 Min|Serves:4)

Ingredients:

1 lemon juice

1 tablespoon champagne vinegar

1 tablespoons walnut oil

1 tablespoon Dijon mustard

¼ cup goat parmesan cheese, shredded

¼ cup fresh mint

¼ cup pine nuts, roasted

¼ teaspoon pepper

2 cups asparagus, shaved

How To

In a serving plate put all the asparagus and set aside.

In a small bowl put some lemon juice along with walnut oil, mustard, champagne vinegar, and give it a good whisk.

Drizzle the dressing over the raw asparagus and garnish it with pine nuts, pepper, mint and cheddar cheese.
