Cherry Bomb Ice Cream

Serves: 8

Preparation Time: 2 minutes

Cooking Time: Nil

Freezing Time: 2–3 hours

Ingredients

13.5 Ounces Coconut Milk

10 Ounces Pitted Cherries

½ Cup Unsweetened Chocolate Chips

1 Tablespoon Glycerin

1 Tablespoon Scraped Vanilla Bean

Erythritol to Taste

Equipment:

Blender

Ice Cream Maker

Directions

Separate about 3 ounces of cherries and set aside.

Blend the remaining cherries, milk, sweetener and vanilla.

Chop the set-aside cherries and mix in by hand with the smoothie.

Pour into your ice cream maker and churn until set.

Just before turning it off, add in the chocolate chips and allow to run for one more minute.

Freeze, scoop and enjoy!
