Green Bean Casserole

Prep time: 10 minutes

INGREDIENTS

Cook time: 35 minutes Serves 8 ∙ 1 lb fresh green beans, trimmed and halved

∙ ½ cup almond flour

∙ 1 onion, sliced

∙ 2 shallots, sliced

∙ 8 oz cremini mushrooms, chopped

∙ 2 tablespoons butter

∙ 3 garlic cloves, minced

∙ ½ cup chicken stock

∙ ½ cup heavy cream

∙ ¼ cup Parmesan cheese, grated

∙ 1 teaspoon sea salt

∙ ½ teaspoon black pepper

DIRECTIONS 1. Bring a pot of salted water to a boil. Add the beans and cook for 5 minutes. Drain and add to cold water. Drain.

2. Mix flour, sea salt, and black pepper in a bowl. Add shallots and onions and toss well to combine.

3. Preheat oil in a skillet over medium heat. Add the onions and shallots and cook for 3-4 minutes.

4. Transfer to a plate. Add the mushrooms to the same skillet, along with butter

and garlic, cook for 5 minutes. 5. Preheat the oven to 400 F. Add cream and stock to the skillet and bring to a boil. Reduce the heat to low and cook until thickens. Add Parmesan.

6. Add the beans and stir to combine. Transfer to a baking dish and top with onions mixture. Bake for 15 minutes. Serve.
