2 tablespoons extra-virgin olive oil, butter, coconut oil, or other fat

1 medium onion, chopped

1 stalk celery, chopped

2 cloves garlic, chopped

3 (14-ounce) cans whole peeled tomatoes, with juice

4 cups Chicken Bone Broth (page 9)

½ cup coconut cream

Salt and pepper, to taste

OPTIONAL: 1 teaspoon or more chopped fresh herb of choice, such as thyme, parsley, dill, or cilantro

OPTIONAL: 1 teaspoon or more of your favorite spice, such as cumin, chili powder, or coriander
