Tom Collins

The very first edition of the classic Bartender’s Guide by Jerry Thomas was published in 1862. Thomas was known as the father of American mixology. It is said that the Tom Collins recipe in the 1887 edition of his book is the first one ever recorded. In his version, the type of alcohol being used was specified after the drink name—for example, “Tom Collins Gin” or “Tom Collins Whiskey.” It was those who came after him who deemed the Tom Collins a gin drink.

Makes 1 drink

1½ ounces dry gin

1 ounce fresh lemon juice

½ ounce Low-Carb Simple Syrup (see here)

Club soda

Lemon wedge, for garnish

1 Combine the gin, lemon juice, and simple syrup in a Collins glass and stir.

2 Fill the glass with ice and top with club soda.

3 Garnish with a lemon wedge.
