Lemonade Pudding
¼ cup lemon juice
½ cup sugar
1 can evaporated milk (freeze until icy in consistency)
1 stick butter, melted
1 cup boiling hot water
1 large package cream cheese
1 package graham crackers
1 (3 oz.) package of lemon gelatin
1 tablespoon sugar
1 tablespoon sugar
Rind of lemon, finely grated
Boil water and add gelatin. Mix and let cool. Roll graham crackers with a rolling pin, and mix with 1 tablespoon sugar and melted butter. Line a cake pan with this, reserving 2 tablespoons of the cracker mix. Next, mix cream cheese with sugar. Add cooled gelatin, lemon juice and rind if desired. Beat can of icy evaporated milk until it becomes very stiff. Add to cream cheese a gelatin mixture. Pour into a cake pan and sprinkle with reserved graham cracker crumbs. Let stand in refrigerator for 24 hours before serving. #Delish!
