MAJESTICAL MAC ’N’ CHEESE

1kg dried macaroni pasta

sea salt and freshly ground black pepper

100g unsalted butter

100g plain flour

1.2 litres semi-skimmed milk

500g Cheddar cheese

2 tablespoons English mustard

1 whole nutmeg, for grating

optional: 1 handful of stale breadcrumbs

Preheat the oven to 220°C/425°F/gas 7. Cook the macaroni in a pan of boiling salted water for 8 to 10 minutes, or until al dente (it’ll continue cooking in the oven, so don’t overdo it now).
