Cut the pork into very thin slices then set aside.

Pour vegetable oil into the inner pot of an Instant Pot Mini then select “Sauté” menu.

Stir in chopped onion and sauté until wilted aromatic.

Add sliced pork to the Instant Pot Mini then sauté until wilted and no longer pink. Press the “Cancel” button.

Pour water into the Instant Pot Mini and season the pork with soy sauce, ginger, pepper, sugar, oyster sauce, and salt.

Cover the Instant Pot Mini with the lid properly and close the steam valve.

Select “Manual” menu on the Instant Pot Mini and cook the pork for 15 minutes.

Once it is done, quick release the Instant Pot Mini then open the lid.

Take about 3 tablespoons of gravy and mix with cornstarch.

Pour the cornstarch mixture over the pork and stir well. add chopped leek to the Instant Pot Mini.

Select “Sauté” menu again and cook the pork for another 2 minutes or until the gravy is thickened.

Transfer the pork together with the gravy to a serving dish then sprinkle sesame seeds on top.

Serve and enjoy.
