Credit for this idea goes directly to my Instagram friend, @saltbyjames. We share a ‘no rules’ approach to making delicious food. The brine from a jar of pickled jalapeños mixed into an egg? Why the hell not?! #lovefoodhatewaste is one of my favourite hashtags and life mantras. Something that usually gets poured down the sink suddenly becomes invaluable. Isn’t that great?

1 egg (if cooking for more people, use 1 egg per every 2 crumpets)

1 tsp brine from a jar of pickled jalapeños

2 crumpets (sourdough, if you can get them)

Butter, for frying

Flaked sea salt and freshly ground black pepper
