• Wood: Avoid putting your wooden cutting board directly under running water. Too much contact with water will ruin the integrity of the wood, and the board may start to rot. Instead, immediately after prepping your food, wash the wooden cutting boards really lightly with a wet rag or sponge and some soap. Try to avoid wooden cutting boards with mineral-oil sealants. These petroleum-based coatings can be unhealthy, especially when used in the kitchen.

• Plastic: Plastic cutting boards are cheap, tough, and multipurpose. And unlike other kinds of cutting boards, you can just throw them into your dishwasher, where the high temperatures will disinfect them. Every night at the ranch, we soak our plastic cutting boards in distilled white vinegar for half an hour or so to kill the bacteria that might be lurking on its surface. Most of the time, you can just wash your plastic cutting board with soap and water, then rinse it off with a little white vinegar.
