Irish Soda Bread

You’re missing a delicious treat if Irish soda bread only appears on your menu around St. Patrick’s Day.

Preparation time: 15 minutes

Cooking time: 45 minutes

Yield: 12 servings

3 cups flour

1/4 cup sugar

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon cream of tartar

1 stick ( 1/2 cup) butter, cut into 8 tablespoons

1 1/2 cups each: raisins, buttermilk

2 tablespoons whipping cream

1. Heat the oven to 350 degrees. Sift together the flour, sugar, baking soda, baking powder and cream of tartar in a large bowl. Mix in the butter with a pastry cutter until small crumbs form. Stir in the raisins until distributed; stir in the buttermilk just until ingredients are moistened.

2. Turn dough onto a floured surface; knead gently about 30 seconds. Place dough in a greased 1-quart casserole or 10-inch cake pan; cut a 1/4-inch deep cross on top with a sharp knife. Brush the bread with the cream. Bake until golden brown and a tester tests clean, about 45 minutes.
