ORANGE TANGERINE MARMALADE

Yield: 4 pints

Ingredients:

1½ cups orange peel, chopped thin

½ cup tangerine peel, chopped thin

3 cups oranges, peeled, seeded and chopped

1 cup tangerines, peeled, seeded and chopped

1 cup lemon, peeled, seeded and chopped

6 cups sugar

6 cups water

In a large stockpot, over a low heat, add orange peel, tangerine peel, oranges, tangerines, lemon, and water. Simmer for 10 minutes, stirring occasionally. Remove from heat. Cover and set aside in a cool, dry spot overnight (10–12 hours).

Return pot to stove, uncover and cook over medium heat until peel is soft. Increase heat to high, add sugar, stirring continuously until sugar is fully incorporated and dissolved. Bring to boil, stirring continuously until liquid begins to gel. Remove from heat.

Ladle hot marmalade into pint or jelly jars, leaving a ¼-inch headspace. Process in boiling-water canner 10 minutes (from boiling point).
