Instructions:

Place all ingredients except last 3 in slow cooker and cook on high 6-8 hours or on low 3-4 hours. Add zucchini and pasta and cook 45 minutes to an hour longer until pasta is tender. Serve with grated parmesan on top if desired.

Meaty Version: Add 1 cup of cooked Italian sausage for extra flavor and nutrition for the meat lovers.

White Bean & Ham Soup

Ingredients:

1 pound white beans (or 4 cans, drained)

2 quarts water

1 medium onion, chopped fine

1 stalk celery, chopped fine

2-3 pounds ham hocks or shanks, or 2 cups cooked cubed ham

1/2 tsp dried oregano

1/2 tsp dried basil

2 bay leaves

2 carrots, peeled and sliced

3 garlic cloves, minced

1/2 tsp salt or to taste

ground black pepper to taste
