PUMPKIN PANCAKES

(Serves: 4-6)

Ingredients

1 ½ cups of milk

1 cup of pureed pumpkin

1 egg

2 tablespoons of vegetable oil

2 tablespoons of vinegar

2 cups of all –purpose flour

3 tablespoons of brown sugar

2 teaspoons of baking powder

1 teaspoon of baking soda

1 teaspoon of ground all-spice

1 teaspoon of ground cinnamon

½ teaspoon of ground ginger

½ teaspoon of salt

Directions

1. Mix together milk, pumpkin, egg, oil and vinegar.

2. In a separate bowl, mix the dry ingredients, flour, sugar, baking powder, baking soda, all-spice, cinnamon, ginger and salt.
