Sycamore Acer pseudoplatanus

Sycamore is in the maple family with its classic five-pointed leaf. According to the food historian Sturtevant in 1919, ‘In England, children suck the wings of the growing keys for the sake of obtaining the sweet exudation that is upon them.’ I find the leaves too bitter to eat but tap the trees occasionally for their sap (see page 168 from January to March. Sycamore sap – with vanilla and caramel notes – can be boiled down into sugar crystals to make a real treat.
