HONEY LIME SMOKED SNAPPER

INGREDIENTS FOR 4-6 SERVINGS

THE FISH

Snapper fillets, skinless, boneless, trimmed of red (1 ½ -lb, 0.80kgs each)

THE MARINADE

Honey – ¼ cup

Sea salt – ¼ cup

Cracked black peppercorns – 1 tablespoon

Cloves – 2 whole

2 allspice berries

Zest of 1 lime, removed in strips

THE SMOKE

Set the smoker according to the manufacturer’s directions and preheat to 275° F (135°C). Add alder wood chips.
