Fried Indian Bread with Colocasia

INGREDIENTS

To make: 6 puris

½ cup buckwheat flour (kuttu atta)

75 gm colocasia (arbi), boiled, peeled and mashed

½ tsp powdered rock salt (sendhya namak)

½ tsp powdered black pepper (kali mirch)

½ tbsp coriander leaves, finely chopped

½ tbsp water

Oil for deep frying

METHOD

4. Combine all the ingredients and knead well to form a pliable dough.

5. Cover the dough and keep aside for 10 to 15 minutes.

6. Divide the dough into 6 portions and roll them into 2” round discs with a rolling pin.

7. Heat oil in a deep frying pan (kadhai or wok). Fry each puri by basting oil on the top till it puffs up. Fry till the puris turn slightly golden brown.

8. Remove them from the oil. Serve as desired.
