As our soils improved and their organic matter content increased, so did their ability to hold moisture. Poor soils can act like sieves or, conversely, can become so locked up they do not drain. We wanted soils like sponges: absorbing, holding, and gradually releasing.

Open fields have a giant reservoir of moisture that buffers dramatic wet and dry cycles. Containers tend to dry out faster and can have soggy bottoms. As a result, irrigating in containers generally requires more frequency and more careful monitoring. Irrigation also has the added benefit of functioning as a cooling agent, as raised boxes can overheat in warm weather.
