Pepper and Tomato Egg Cups with Spicy Salsa

So many breakfasts that don’t contain cereal seem to contain oats, fruit or eggs. I wanted to find a different way to cook eggs and this is what I came up with. These are fun to make with children as they are so colourful and the kids can get involved in the scooping of the pulp, pouring in of the eggs and hopefully enjoy eating them too!

serves 4

2 large red peppers

Leaves from a few sprigs of fresh thyme (to give about 2 tsp) or a ½ tsp dried thyme

4 large tomatoes (I like to use beef tomatoes)

8 free-range eggs

½ bunch of chives, finely chopped

50g wild rocket

Sea salt and freshly ground black pepper

salsa

1 spring onion, white and green finely chopped

Large pinch of paprika

Sea salt and freshly ground black pepper
