Make the pasta

Boil gluten-free pasta according to box directions. Drain pasta water from the pot but leave pasta.

Add sauce and spinach to the pasta pot. Warm on low heat for 2 to 4 minutes until sauce is warm and spinach is wilted. Remove from heat and plate.

Top with arugula and shaved parmesan and serve.

3 cups fresh spinach

1 cup grains (see below for options)

2 bay leaves

1 teaspoon dried parsley

salt and pepper, to taste
