Cupcakes

1. Preheat oven to 350 F.

2. Line muffin pans with cupcake liners.

3. Next, combine butter, olive oil and sugar in mixing bowl and beat on medium high speed until light and fluffy, about three minutes.

4. Add vanilla and eggs and mix about one more minute until well blended.

5. Stir in orange zest.

6. In a separate bowl, sift together flour, baking soda, baking powder and salt.

7. In another bowl, combine heavy cream and orange juice.

8. Now start to put it all together by alternating adding the flour mixture and the cream mixture, ending with a flour mixture. Mix until just blended after each addition.

9. Fill the cupcake liners to about 2/3 full.
