Hooray! Camp, as in an actual row of tents, is back! Everyone is buying tents, from lonely fell walkers to extended families. All of which leads me to this muddy booted collection of recipes. I’m preparing you for the revolution. Imagine the campsite going the way of that other re-invented institution; the pub.

At ‘gastro campsites’ potato granules and spam would be confiscated on arrival, and campsite shops bulldozed into foraging patches (wild sorrel is the new rocket). Actually, I’ve always loved camping but never understood that slightly masochistic tendency to live on miserable food when outward bound.

Cooking under canvas needs to be simple, but any traveller will tell you that some of the best food in the world is the moveable feast; from Indian railway journeys to Caribbean beach shacks. The recipes are a nod to that kind of cookery. My motto is this: one burner stove equals one-pot cooking. Moreover, it needs to be fairly brisk. Mess tins are great but the camp stove’s best friend is a wok.
