Making Stuffed Eggplant

1. PREPARE EGGPLANT Using tip of knife, score each eggplant half in 1-inch diamond pattern, about 1 inch deep. Brush scored sides with oil, season with salt and pepper, and roast cut side down on preheated baking sheet.

2. MAKE STUFFING Soak bulgur until softened. Meanwhile, cook onion, garlic, oregano, and spices. Off heat, stir in soaked bulgur, tomatoes, Pecorino, pine nuts, and vinegar.

3. STUFF EGGPLANT Using 2 forks, gently press eggplant flesh to sides. Mound bulgur mixture into eggplant halves; pack lightly with back of spoon.
