16. Japanese eggy oyakadon

Believe it or not, egg meal is the life of the bento box and this is going to be your first time trying oyakodon. This recipe is pretty simple for a lunch box or a nice dinner.

Ingredients

1 large boneless chicken thigh. Nicely cut to bite sizes

3 large eggs, beaten

2 ¼ tbsp. mirin

½ cup. Dashi

2 bowl. Cooked rice (short grain)

2 ¼ tbsp. soy sauce

1 large yellow onion, thinly sliced

1 spring onions, (green part) nicely sliced

½ tsp. sugar

1 ¼ tbsp. Japanese sake
