As an example, coffee consumption fell 50 percent over four decades until Starbucks Corp. made a brand out of a commodity; coffee consumption has inched upward since 1995 (Kilman, 2002). Another example of a food with a consumption history is chocolate. A nineteenth-century gourmet, Jean-Anthelme Brillat-Savarin, said that Spanish ladies in the New World were so enamored with hot chocolate that they sometimes had it brought to them in church. Chocolate consumption has been rising steadily in the United States. In 2000 total US chocolate consumption rose to 3.3 billion pounds, up almost 7 percent from 3.1 billion pounds in 1996, which amounts to almost 12 pounds for every man, woman, and child (Constant Cravings, 2002). Other items increasingly consumed are salty snacks like chips, popcorn, and pretzels. According to a report released by Chicago-based Mintel Consumer Intelligence, 17 percent of Americans report they “can’t help snacking on salty snacks” (Junk-Food Nation, 2001).

Different colors and taste combinations keep being developed. H. J. Heinz Co. introduced an Ore-Ida line extension called Funky Fries. This kid-oriented product, found in the freezer section of grocery stores, has new colors and flavors, including Cocoa Crispers (chocolate fries). This product comes on the heels of the success of neon-colored ketchup by the same company.

Unusual uses for foods also are on the horizon. Four football players at Sacramento State applied ConAgra Foods’ Pam nonstick cooking spray to one another during a game with the University of Montana. They lost the game, but the Big Sky Conference launched an investigation into the “slippery actions of the players.”

Waiting for fruits and vegetables to be in season is a thing of the past. We get kale, apples, grapes, and lettuce year round. When it is winter in the United States, it is summer in New Zealand and Chile. With transportation and shipping advances, anything can be brought fresh to market.
