KEY LIME PIE WAS A WONDER the first time I tasted it. Similar to European citrus tarts, it nonetheless is iconically American, so when I was coming up with flavors for truffles, I naturally thought of key lime. Like the pie, these truffles are best made with authentic key limes, available only in late winter and early spring. They are particularly tart and add heady astringency to the truffles. You can buy good-quality bottled key lime juice in gourmet stores.
