MAKES 20 BARS
These bars are like grown-up Rice Krispies Treats, but we’ve upgraded from marshmallows and puffed white rice cereal to more virtuous ingredients like honey, raw seeds, brown rice cereal, and tahini, or sesame seed paste, which adds richness and calcium (it has more than triple the amount per tablespoon than cow’s milk). You can use any combination of nuts and seeds you like; for crunchier bars, try adding chopped almonds or macadamia nuts. You can also change up the sweeteners—agave and coconut nectar work nicely. Just keep the amounts the same and substitute away.
FOR THE BARS:
1 cup raw sunflower seeds
1 cup raw sesame seeds
3 cups puffed or crispy brown rice cereal
2 tablespoons black chia seeds
¾ cup raw honey
¾ cup pure maple syrup
½ cup tahini
1½ teaspoons sea salt
