67.Flavors of Dong Flavor Type Baijiu

The Dong flavor type Baijiu, also called the Herblike flavor type Baijiu, is represented by Dong Baijiu with rich flavors from esters with a medicinal herb incense aroma, and a composite flavor of butyric acid and ethyl butyrate. The Baijiu products taste sweet and mellow with a sour beginning note, and a long aftertaste. The flavor of esters, the mellowness and the medicinal herb are important for the Dong flavor type Baijiu, among which the herb incense is a primary characteristic. Figure 5.8 shows a typical representative of the Dong flavor type Baijiu.
