Budget your time and be realistic about what you can pull off. If your dishes include tried-and-true, easy-to-make food, like crudités or a cheese plate, then you can afford to be more ambitious with the other dishes.
One simple way to up the ante is to go all out with your cheese plate, with big wheels of elegant cheese hand-tagged like at an elegant cheese store. An elaborate cheese plate is an excellent opportunity for signage. It’s a no-brainer. You can have cheeses handpicked to pair with quince, sliced figs, fresh fruit, olives, and nuts. You can even add meats or a whole charcuterie board. For one party I made several small charcuterie boards for two to three people to indulgently share with hard cheese, soft cheese, olives, nuts, sausage, and prosciutto. Without fail, cheese is always a huge hit.
Any cheese tastes better when it’s sliced. Even at kids’ parties I’ll put out a bowl of Babybel cheese, sliced, and the adults can’t get enough of it.

RUNNING OUT OF FOOD
I make way too much food. It’s just my nature. But one time I hosted a tea party—it was at three o’clock so I just made mini sandwiches. Dessert was Bananas Foster, which I planned to bring out, flaming of course, later in the party. Within five minutes, all of the mini sandwiches were gone. I’d made about four tea sandwiches per person, which I thought added up to a whole sandwich each, but for some reason people were really hungry that day. The arrival of the dessert was supposed to be an event in itself. The grand finale. But with an empty food table, we had no choice. We brought out the Bananas Foster.
