Variations: Upside-Down Appplesauce N’ Walnut Cake – Add 1 cup of chopped walnuts to topping mixture before pouring cake batter over top.

Upside-Down Fudge Applesauce Cake – Beat 1 lite carob square, room temperature, into topping mixture, omit cinnamon; add 1 tsp. vanilla extract.

CAROB BRAN SPICE CAKES

These little cakes are as light as a feather

Preheat oven 350 degrees

1 cup all purpose flour

1/2 cup bran, raw

1 tsp. baking soda

1/4 cup carob powder

1/2 tsp. salt

1 tsp. ginger, ground

1 tsp. cinnamon, ground

1 egg

1/4 cup honey

1/4 cup molasses

1/2 cup vegetable oil

1/2 cup sour cream

Sift dry ingredients together. In medium mixing bowl cream egg, honey and molasses Beating on high speed, slowly add oil in fine stream. Mixture will thicken Turn mixer down to medium speed, add dry mixture alternately with sour cream Beat just till well mixed Crease and flour 2 inch muffin cups Fill 1/2 to 2/3 full. Bake in 350 degree oven 20 to 25 minutes. Let cool in pan about 10 minutes Loosen edges with knife and finish cooling on racks. Drizzle with cream cheese icing (see frosting section)

Yields 12 2 inch cup cakes.
