2 chopped serrano chiles or 2 to 5 Thai chiles, halved

1 scaled and gutted fish (about 3 pounds), such as tai snapper

⅓ cup canola oil

2 cups minced yellow onion

⅓ cup minced garlic

1 tablespoon minced ginger

1 tablespoon minced galangal (optional)

1 teaspoon turmeric

1 teaspoon salt

½ cup Tamarind Water

10 ounces fine rice noodles
