Kimmel-, Kummel-, Kuemmel, Kümmel, Which Weck is Wick(ch)?

After you look for beef on weck on just a few menus in Buffalo, you’ll quickly notice that it’s spelled in a variety of different ways: kimmel­weck, kummelweck, kuemmelweck, kümmel­weck, and even kummel weck. So which is it!? Is it just a typo? And if not, why the different spellings and which one is correct?

We’ve already noted that kümmel is the German word for “caraway” and that weck means “roll” but if you dig around, it seems like weck means “roll” in the southwestern German dialects of the regions of Saarland, Swabia, and the surrounding areas—not everywhere. In northern Germany, or at least in formal textbooks, “roll” is generally brötchen. That could back up the idea that the original baker was from somewhere in southwestern Germany. (Are you having visions of William Wahr following a trail of kummelweck crumbs left behind in the Schwarzwald by Hansel and Gretel or is that just me?) To boot, the roll used in the Buffalo sandwich tends to be softer and fluffier than a standard German kümmelbrötchen or kümmelweck!
