1½ ounces Earl Grey gin (recipe below)

½ ounce Cointreau

1 ounce apple juice

½ ounce Shaoxing wine

1 egg white

Shake ingredients vigorously with ice and strain into a chilled cocktail glass.

FOR THE EARL GREY GIN

Steep two tea bags or 2 teaspoons loose tea in 6 ounces of gin for 30 minutes. Strain and store refrigerated in a sealed container for up to 2 weeks.

Made up of sixteen individual cities, the capital of the Philippines is more of a decentralized megalopolis than unified entity. Painfully difficult to get around with legendarily bad traffic, Manila nevertheless boasts vibrant pockets of some of the most exciting art and music scenes anywhere in the world—not to mention cocktails. In fact, this may be among the most underrated major cities in the world, a place where big things are happening under the radar and a little research rewards those who take a look.

It is important to know that cocktail culture is very old in the Philippines. When drinks writer Charles H. Baker Jr. dropped by the islands in the early 1930s, he noted that it was in Manila where he found Asia’s “best and most consistent group of mixed drinks.” Baker included a number of drinks by Filipino bartender Monk Antrim in his book, The Gentleman’s Companion, and they are all worth exploring.

While it has been a protracted journey to take possession of the country’s rich cocktail heritage, Manila bars are making up for lost time. Today, prestigious bar competitions are taking place in the country, and Filipino bartenders are becoming recognized globally for their exceptional skills and creativity.
