BLUEBERRY FILLING

Place the blueberries in a large bowl. Add the remaining 1 tablespoon of granulated sugar, cornstarch, lemon zest, and lemon juice and gently toss the fruit to coat completely.

Place about 1 teaspoon of this mixture in the center of each dough square. Use a pastry brush to brush the outer edges of each square with water. Be sure to brush only the inner part of the dough, not the outside. This will help the pastry dough stick together when the turnovers are formed.

Bring opposite corners together and fold each pastry square diagonally in half, lining up all the edges and points and forming a triangle. Pinch the edges together firmly. Use a fork to press the edges together and imprint a design.
