Ingredients

2 large sweet potatoes, peeled and diced

2/3 C. water

2 large Honeycrisp apples, diced

2 tbsp butter, diced

2 tsp ground cinnamon

1/2 tsp ground nutmeg

Directions

1. Set your oven to 425 degrees F before doing anything else.

2. In the bottom of a microwave safe loaf pan, arrange the sweet potatoes and apples and sprinkle them with nutmeg and cinnamon.

3. Add enough water to cover about 1/2-inch of the bottom and cook everything in the microwave for about 8 minutes.

4. Drain well.

5. Place the butter over the apple mixture in the shape of dots and cook everything in the oven for about 10 minutes.
