Aunt Helen’s Chinese Chews

MAKES 14 TO 20 CHEWS, DEPENDING ON SIZE

A wonderful recipe from an exceptional baker, one of my special role models—my aunt Helen. As Aunt Helen used to say, these taste rich (but aren’t), taste buttery (but are pareve), and seem fancy (but are easy to make). You can make these squares entirely in the food processor.

¾ cup all-purpose flour

1 teaspoon baking powder

¼ teaspoon salt

1 cup sugar

1 cup coarsely chopped walnuts

1 cup coarsely chopped dates

2 eggs, beaten

Confectioners’ sugar, for topping
