Mexican-themed Potato Salad

Ingredients:

1 potato (boiled and cubed)

1/2 red bell pepper (diced)

1 green chili (thinly sliced)

½ cup Black beans

¼ cup corn

2 tsp lime juice

½ cup spicy salsa

Preparations:

Place potatoes in a mixing bowl and add in bell pepper, chili and lime juice. Stir to combine.

Add the remaining ingredients in, mix and serve.

Eggless Tofu Salad

Ingredients:

18 ounces extra firm tofu, squeezed dry with paper towel/diced into cubes

2 multi-grain wraps

1/2 cup vegan mayo

1/2 cup scallions (chopped)

1/2 cup Dijon mustard

1 tsp turmeric

1/2 tsp garlic powder

1 tsp maple syrup

1 tsp celery seed

1/3 tsp cayenne powder

Black pepper to taste.

Preparations:

1. Start by squeeze drying tofu and dicing it into small cubes.

2. Add all ingredients into a bowl and mix well.

3. Toss them into your wraps and roll.
