Mayo – Vegan Style

Serving Yields: 1 cup – 1 tbsp. portions

Nutritional Counts: Fat: 13.8 g

Ingredients:

Safflower oil – 1 cup

Apple cider vinegar – 1 tsp.

Unsweetened soy milk - .5 cup

Juiced lemon - 1

Sea salt - .75 tsp.

Preparation Method:

Use a high-speed blender to mix the lemon juice, soymilk, vinegar, and salt on the high-speed for one minute.

Slowly pour the oil while blending on low. (Remove the center lid cover.)

Blend on high with the lid back for about two minutes until thickened.

Add the mayonnaise to an airtight jar. It needs to chill for a minimum of one hour before using.
