Step 2: Whip the Cream

Use a mixer to whip the cream until there are firm peaks forming on top.

Beat the egg yolks until foamy.

Step 4: The Most Important Step

Mix the sugar and the water in a saucepan and bring to a boil, while stirring constantly. Then, add that syrup to the egg yolks while the mixer is working.

This step serves two purposes:
