Toffee Date Pudding

Toffee pudding with sticky dates all topped with more toffee! Totally indulgent.

Makes: 8

Preparation Time: 15mins

Total Cooking Time: 1hour

Ingredient List:

6 tablespoons + extra butter (softened)

2 cups dates (pitted, chopped)

1 cup water

1 teaspoon baking soda

1⅓ cups all-purpose flour

1 teaspoon baking powder

½ teaspoons allspice

½ teaspoons sea salt

¾ cup brown sugar

3 small eggs

1 teaspoon vanilla

1½ cups toffee sauce (warmed)

Instructions:

1. Preheat main oven to 350 degrees.

2. Lightly grease a square baking tin.

3. Add the dates and water into a saucepan. Bring to a boil and add in the baking soda. Heat for 2-3 minutes. Stir well and set aside.

4. In a mixing bowl sift together the flour, baking powder, all spice and sea salt. Set aside for a moment.

5. Into the bowl of an electric mixer add the butter and brown sugar. Beat until creamy. Crack in the eggs and pour in the vanilla. Mix well (don’t worry if the mixture appears to curdle).

6. Add the flour mixture in a little at a time. Alternating each addition of flour with an addition of the date mixture. Beat on high speed until totally combined.

7. Transfer the batter to the baking tin.

8. Place in the oven and bake for 40-50 minutes.

9. Gently prod a few holes into the top of the cake. Pour over half a cup of the warmed toffee sauce.

10. Cut the cake into squares and serve while still warm with the remaining toffee sauce in a jug for pouring.
