1. Preheat oven to 425°F. Place butter in a 9" × 13" pan and place in oven while preheating to melt butter.

2. Crack eggs into a small bowl and beat.

3. In a blender, add coconut flakes, flour, garlic powder, salt, and pepper. Pulse until coconut is a fine powder. Pour into a medium dish.

4. Carefully remove hot dish from oven. Working with one drumstick at a time, dip chicken in egg, then roll and pat in coconut mixture, then place in hot dish.

5. Bake 25–30 minutes until thermometer inserted in chicken reads 170°F.

6. Remove to a paper towel–lined plate and serve when cool enough to eat, about 10 minutes. Store leftovers in a sealed container in refrigerator up to 3 days.
