Place the tofu in a bowl.
Heat the vegetable oil in a frying pan over a medium heat until it reaches 160°C. An easy way to tell when the oil is ready is to place a wooden chopstick into it – when bubbles form on the surface of the oil it is ready.
Add the garlic and lemongrass, and fry for 2 minutes until golden brown. Add the remaining ingredients, except the tofu, and stir-fry for a further 3 minutes.
Take the pan off the heat and pour the sauce over the tofu. Set aside to cool, then gently run your fingers through the mix to evenly coat all the tofu strips with the sauce. Now stuff the tofu straight into your bánh mì.
